South Indian states like Kerala and Tamilnadu usually add Beetroot in their daily routine lunch.

Ingredients
 1 cup Beetroot [chopped or peeled]
 3 tsp Moong Lentils [Green lentils]
 1 Dry Red Chilli
 1 Green Chilli
 1 1 onion [chopped]
 1 tsp Mustard Seeds
 1 Bengal Gram
 1 tsp Red Chilli Powder
 1 Turmeric Powder
 Salt As needed
 2 tsp Oil As needed
 Water As needed
 5 tsp Curry leavesIf Need

Wash the dried roasted mung beans well.

Boil the moong lentils with the turmeric powder in an open pan for 10 minutes

Heat the oil in a pan and add the mustard.

Then add the lentils.

Add onion, dried chillies, green chillies & curry leaves, and fry till soft.

Add beetroot and fry for 3 minutes.

Add turmeric powder, red chilli powder, and salt and fry well.

Add enough water and cook until soft.

Then add the boiled moong lentils and mix well.

Then reduce heat and serve hot with rice or chapati.
