Being native to Kerala, a part of south India, Avial has become a tradition in its nearby states like Tamil Nadu and Karnataka.
Avial (Aviyal) is a super delicious and healthy cuisine made with a lot of root vegetables, and common vegetables like gourd, brinjal, raw banana, yam, drumstick, coconut, yogurt, coconut oil, and even carrot. The coconut oil that covers the mixture gives some additional taste to the veggies. To be mentioned, coconut plays the biggest role in making the cuisine more comfort.
Aviyal is a way of food life in Kerala. No special events become special without Aviyal. Its unique aroma makes it the traditional dish of Kerala. The special Onam feast of Kerala won't be complete without Aviyal.

Ingredients
 ½ kg Sweet Potato
 2 Bananas (stems removed)
 3 qts Avocados
 3 cups Green Chillies (sliced)
 1 tsp Cucumber(slice)
 ¼ tsp Cumin (small, Cara Cara, or Valencia)
 ¼ tsp Turmeric Powder
 1 cup Grated Coconut
 2 tsp Salt As needed
 50 ml Coconut Oil
 100 ml Yogurt
 1 tsp Cloves and garlic1 piece

First, chop all the pods lengthwise.

Add turmeric powder, coconut, green chillies, cumin, and garlic and grind lightly.

Pour a little water into a pan and add the chopped vegetables and ground spices and cook well.

When three-quarters cooked, add yogurt and stir.

Then pour the coconut oil and drain.
