It’s Christmas time, yay! Around the world, the birth of the Lord makes the day a complete positive to all the living beings. The day changes the bad to good as we know “change is a possibility, not a given”. One way of sharing happiness among the neighborhood is by sharing eateries and having a good talk. If you buy food for your people why not prepare it yourself, when you can put your love and affection in it. Chocolate Cranberry Christmas Cake is more of a cuteness to all. What if you make one yourself and share it with your family and friends? The appreciation you will receive is another kind of happiness. If you are ready to make one today, try this easy and professional cake. As it usually takes, you don’t need to beat or soak fruits to make this surprise cake.
In a saucepan, mix around 3/4 cup of granulated sugar and 3/4 cup water and heat the mix in an over medium flame, until sugar is dissolved.
Now take it off from the stove and cool for 5 minutes. Take a small sized bowl and add cranberries and syrup and stir them to blend. Now refrigerate the blend for an hour with lids of the bowl open.
You can now take berries from the refrigerator and drain out the water that is condensed inside.
In another bowl, add the remaining 1/2 cup granulated sugar roll the berries one at a time until it is fully covered. Move the berries to a waxed cookie-papers and let it in standard room temperature for an hour or until dry.
Now it Oven time, heat oven to 350°F and then butter bottom the cooking pan at all the sides to not allow the cake to stick on the pan while heating.
Take a large bowl, and blend the cake ingredients with electric mixer on medium speed for two minutes, batter it continuously and pour 1 2/3 cups of the batter in each pan.
It’s baking time. Place the mix for 20 minutes inside the oven. You can check the bake by inserting a toothpick at the center, as you know the best baked ones will comes out clean. Now turn it off and cool for 10 minutes. Now take them out of the oven and allow to cool and standard room temperature for about an hour.
Take a large bowl and place the vanilla cream, softened butter, and add 1 tablespoon of milk and blend it well with an electric mixer. Now add powdered sugar and blend continuously until the mix is fluffy. Milk can be added few by few if you need more consistency in the fluffiness.
Place one cake layer on the serving plate, and add 3/4 cup of frosting on its top; then add the second layer of cake and spread 3/4 cup of frosting on its top; do the same for the third layer. Frost the sides with a thin layer and make the sides covered by the frosting. You can add frosting as you need but cake still shows through.
To decorate the cake, place few sugared cranberries on the top and garnish it with sprigs of rosemary. Enjoy the day with your delicious cake and spread the happiness.
