Puri can be a morning breakfast or can be also a lunch appetizer. Most South Indian restaurants serve Puri for Breakfast. Wheat flour, salt, and water are mixed well and flattened on a rolling pan, and later dipped in boiling oil to make fluffy puffs of bread that fill the air in the middle thus making a gorgeous snack. The puri gets a magic combination of crispy, fluffy, and light soft properties when it is taken out of the frying pan. Take wheat flour, salt, and oil or melted ghee in a mixing bowl.
Add a little water and knead well. The flour should be hard and firm.
Divide dough into small or medium pieces - about 25 to 30 medium or slightly smaller balls.
Spread a little oil on both sides of the dough ball.
Roll the dough evenly into circles about 5 inches - roll out evenly without being too thin or thick.
Place the rolled puri on a plate and cover with a clean kitchen towel. (So they do not dry out.)
Heat the oil in a deep frying pan or skillet.
When the oil is hot enough, add one puri at a time, press gently with a round spoon, and fry.
Turn over and fry until golden brown.
Serve hot with desserts such as vegetable curry or potato curry.
